Additional Notes:

Brewed with the help of Jason & Kelly Blevins and Yaron & Liel Azrieli. Took Batch 018, lightened it up, and moved to Chinook, Cascade, and Citra hops. Equally good, but different.

Mistakes:
1. Preheated the mash tun when it wasn't necessary, causing an over-shoot of strike temp by 4-6 degrees.
2. Then over-cooled by adding 1qt of cold water. Needed 8 more quarts of hot water to get it back up to 151.
3. Pre-boil gravity seemed a touch low, but it came out okay post-boil for some reason.
4. Couldn't drain the wort through the valve; had to siphon. Lost some volume due to spillage while messing around. Thanks to Kelly Blevins for reminding me that we can siphon.
5. Final volume was only 4.5 gallons. Still learning how to account for this in BeerSmith. Need to set Batch Size = 6 gallons for 1 gallon trub loss.
